Job Description

  • Effect of Hydrocolloids on the Physical Properties of Dried Nata de Coco: Researched and developed solutions to mitigate the "hornification" (permanent shrinkage) of bacterial cellulose (BC) during the drying process to enhance its industrial applications. - Formulated and evaluated 4 types of hydrocolloids (CMC, SA, GG, MD) at varying ratios to optimize the physical properties of BC powder. - Conducted comprehensive laboratory analyses, including Moisture Content, Water Activity (a), Flowability (Angle of Repose), Viscosity, and Sedimentation Stability. - Utilized ImageJ for precise sedimentation measurement, a Brookfield viscometer for rheological analysis, and SPSS for statistical evaluation (ANOVA). - Successfully identified optimal formulations: a BC: CMC (1:1) blend for high-stability powdered beverages and a BC: GG (1:3) blend for excellent flowability in encapsulated products.

  • In-Process Quality Inspection (IQI): Monitored production parameters across 4 processing lines (Fried, Tempura, Roasted, Grilled), ensuring strict compliance with Critical Control Points (CCP 1) for temperature and time control. - Quality Analysis: Conducted chemical and physical evaluations, including Moisture Content (MC) monitoring, Acid Value (AV) testing, and sensory evaluations to maintain product specifications. - Finished Goods Verification: Executed packaging integrity checks (e.g., leak tests, seal strength) and operated X-Ray systems (CCP 2) to detect foreign contaminants (Stainless, Glass, Fe, Non-Fe) prior to product release.
