หน้าที่ความรับผิดชอบ

Sovereign Hotel at Pratunam Bangkok comprises of 59 comfy guestrooms, spa & massage wellness treatments, fitness, and the restaurant situating at Petchburi Soi 22nd on Petchburi Road. Opening soon within end of year 2017.

Locating by walking distance to Bangkok's shopping city center district, and is Thailand's largest clothing market called, "Pratunam" or "Water Gate" at Phetburi Road in the Ratchathewi district. Accessable by public bus No.25, No.29, taxi, walking from shopping malls on sky-bridge and Khlong Saeng Saep Canel public express boat.

- Schedule culinery team of Sous Chef, Commis II, Cook, and Stewarding.
- work as a shift and split-shift.
- Create the menu, cost control of menu mixed ingredients for breakfast, lunch, dinner and seasonal promotions.
- Control cost of food, beverage on stock and make up to demand of daily guest covers on forecast, reservation dinning, and actual for budget.
- Train the staff for cooking production, cleanliness, wastage and spoilage food safety upto government rules and regulations.
- Train the stewarding for washing dishes, table service utensil and storage of utensils and cutleries.
- Control Assets of kitchen equipment, lost and damage from kitchen team and stewarding by daily and monthly basis.
- Make delicious menu toward guest leaving positive comments for restaurant.
- Able/learn to use computer for a hotel restaurant such as PMS,POS, Menu Mixed, Stock control.

- สร้างเมนูควบคุมค่าใช้จ่ายของส่วนผสมในเมนูสำหรับ มื้อเช้า มื้อกลางวันมื้อเย็น และโปรโมชั่นตามฤดูกาล
- ควบคุมค่าอาหารเครื่องดื่มในคลัง โดยทำตามความต้องการของผู้เข้าพักรายวันครอบคลุมเกี่ยวกับการคาดการณ์การรับประทานอาหารที่สำรองมาและกระทบยอดค่าใช้จ่ายครัวกับงบประมาณคำนวนกำไรเเละต้นทุนที่แท้จริง
- ฝึกอบรมพนักงานเพื่อผลิตอาหาร การทำความสะอาด ลดการสูญเสียและการบูดเสียของอาหาร มีความปลอดภัยตามกฎระเบียบและข้อบังคับของรัฐบาลเเละสุขอนามัย
- ฝึกอบรมพนักงานในการล้างจานช้อนส้อมโต๊ะและอุปกรณ์ จัดเก็บของเครื่องใช้ต่างๆในห้องอาหาร
- ควบคุมทรัพย์สินของอุปกรณ์ครัว ไม่ให้สูญหายและเสียหายจากทีมครัวและพนักงานเสิร์ฟโดยรายวันและรายเดือน
- ทำเมนูแสนอร่อย สามารถสร้างคำชมจากลูกค้าให้มีความคิดเห็นในเชิงบวกสำหรับรสชาติอาหารเเละถูกสุขอนามัย
- สามารถใช้หรือเรียนรู้ระบบคอมพิวเตอร์ร้านอาหารโรงเเรม PMS,POS, Menu Mixed, Stock control.
